Tortilla Pizza
I love making these little tortilla pizzas on busy nights
when I don’t have time to cook a fancier meal for the family. The temptation is always there to stop by my
favorite pizza place in Norman: Sandro’s on Main across from the high
school. I get their extra large Greek
pizza with feta, spinach, and onions; it’s full of cheesy goodness. When I do get Sandro’s, I really enjoy it,
but I choose to make these mini pizzas some weeks to not only cut the budget
but of course that cheesy fat intake.
I think I first saw an idea for making little pizzas out of
tortillas on Sesame Street when my kids were little. It worked great to get the kiddos to help
make the food and pick which veggies they wanted. If they helped, I often had more luck in
getting them to eat it! Now that they
are older teens I still catch them making these all the time, and they have
come up with many variations.
Spending a little extra on good quality tortillas is worth
it. All the health food stores in town have
various options. I get the Stacy brand tortilla at the Natural Grocers.
Ingredients for basic pizzas:
Good quality tortillas
1 can of tomato sauce
sprinkles of spices: garlic, basil, oregano
(or just buy a can of pizza sauce instead of the last two
items)
chopped veggies: peppers, onions, mushrooms, spinach,
zucchini, tomatoes, artichokes, etc.
Italian shredded cheese mix
Directions
Preheat oven to 350
Grease a cookie sheet with just a little olive oil and place
as many tortillas as you can fit on the sheet.
Spoon some tomato sauce on each tortilla and spread it around. Sprinkle spices onto the tomato sauce. Load up with all the veggies you like and
then sprinkle lightly with cheese. Bake
the tortillas for 8-10 minutes until they are crispy and the cheese is melted.
Variations: Go Greek
with olives and feta. Go Mexican by
spreading refried beans on the tortillas instead of tomato sauce, and then add
Mexican cheese and salsa on top of the veggies.
We usually serve these with salad for a nice light
supper. Hope you enjoy!
